Breakfast and Dinner together! It almost tastes like "candied" chicken.  A must-try!

 

Ingredients

 

Chicken
2 cups Cap'n Crunch cereal
1 1/2 cups corn flakes
1 egg
1 cup milk
1 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 lbs chicken breasts, cut in 1-oz tenders
vegetable oil (for frying)

 

Creole Mustard Sauce
1 cup mayonnaise
1/4 cup creole mustard or Dijon mustard
1 teaspoon yellow mustard
1 teaspoon horseradish
1/2 teaspoon cider vinegar
1 dash Worcestershire sauce
1 teaspoon red wine vinegar
1 teaspoon water
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon green onion, sliced in pieces
1 teaspoon crushed garlic
1 teaspoon finely chopped green pepper
1 teaspoon finely chopped celery
1 teaspoon finely chopped onion


Directions

  1. Coarsely grind or crush the two cereals and set aside.
  2. Beat the egg with milk and set aside.
  3. Stir together the flour, onion and garlic powders and black pepper.
  4. Set aside.
  5. Dip the chicken: pieces in the seasoned flour.
  6. Move around to coat well, then shake off the excess flour.
  7. Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.
  8. Heat oil in a large heavy skillet to 325.
  9. Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, 3 to 5 minutes depending on size.
  10. Drain and serve immediately with creole mustard sauce.
  11. For sauce:Mix all ingredients together.

Irish Canadian Beef Stew

Ingredients
2 1/4 pounds cubed beef stew meat
1 onion, chopped
4 potatoes, peeled and cut into bite-size pieces
4 carrots, peeled and cut into bite-size pieces
1 turnip, peeled and cut into bite-size pieces
1/4 cup all-purpose flour
1 clove garlic, chopped
2 cups beef stock
3 cups vegetable stock
1 1/2 cups Irish stout beer (such as Guinness®) (optional)
1/2 cup pearl barley
2 sprigs fresh thyme
2 bay leaves
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions


  1. Cut any excess fat from the beef, reserving about 2 tablespoons of fat. Place the fat into a large pot over low heat, and cook, stirring occasionally, until the liquid fat renders out, about 15 minutes. Remove and discard any solid bits that remain.

  2. Place the beef into the hot melted beef fat, and brown on all sides over medium heat, stirring often, about 10 minutes. Cook until nearly all the beef juices have evaporated and begun to brown. Stir in the onion, and cook and stir until the onion starts to become translucent, about 2 minutes. Stir in potatoes, carrots, and turnip, and sprinkle on the flour in several batches, cooking and stirring to coat the ingredients with flour. Stir in the garlic, and cook and stir the meat and vegetables for about 2 minutes to remove any raw flour taste.

  3. In a saucepan over medium-low heat, mix the beef stock and vegetable stock together, and heat until hot but not boiling. Pour the stock mixture, Irish stout beer, barley, thyme, bay leaves, salt, and pepper over the beef and vegetables and stir to dissolve any brown flavor bits from the bottom of the pot. Bring the stew to a boil, reduce heat, cover the pot, and simmer until the meat is very tender, about 2 hours. Stir every 30 minutes, and check seasoning after 1 hour of cooking time. The cover can be removed in the last 30 minutes if you want a thicker stew.

Have you ever wanted to catch a leprechaun or steal his pot of gold? Today is your lucky day! We are going to give you tips and hints on how to do just that!

How To Catch A Leprechaun

If you get lucky and manage to catch a leprechaun you need to be smarter than him or else you will be easily tricked which can have damaging results, never take your eye off him or he will vanish. A captured leprechaun will grant you three wishes or a gold coin to bribe his way to freedom but this is when things can go terrible wrong if the wrong decisions are made.

Many of an Irish man who thought he could out smart an Irish leprechaun had selected the three wishes and would either go insane trying to think of what to wish for or their wishes would back fire with something bad happening.

One common story was of Seamus in County Mayo who wished to be the richest man on a tropical Ireland but when his wish came true he suddenly realized that there were no shops or pubs on the island to spend his money or even people to talk with. Unfortunately Seamus became bored after a few hours on the Island and had to waste his third wish to return to Ireland. This could be how the phrase “luck of the Irish” originated from.

One of the biggest tips an Irish person can give anyone is to never listen to what the Irish leprechaun says, no matter what. The leprechauns are great mind players and will say anything into confusing you into making the wrong wishes, although he is smart he can be fooled.

Irish leprechauns are devious little creatures and will do anything to escape from man so they should never be trusted. Some say angry leprechauns are more common than a friendly one but this is very untrue as Irish leprechauns are very friendly but tend to dislike humans who always seem to chase them for wishes and pots of gold.

If you ever spot a leprechaun you may be better off to pass him by without taking notice, you can end up in more trouble than its worth if you decide to chase them as the people of Ireland only know too well. Unfortunately with cities in Ireland expanding the poor wee leprechauns are being driven further underground away from man, taking their rainbows with them.

How to Get a Pot of Gold from a Leprechaun 
  1. Listen for the sound of his hammer. Leprechauns are often busy making a shoe (and only one shoe) for an elf.
  2. Sneak up on the leprechaun. Hopefully, he will be absorbed in his work and will not hear you.
  3. Hold on to the leprechaun and don't let go. Expect him to put up a pretty good fight, even if he is only about 2 feet tall.
  4. Keep your eyes on the leprechaun. He will do anything to get you to look away for a second. If you do, he will disappear into the mist, and his pot of gold is safe.
  5. Threaten him if he is especially resistant to telling you where the pot of gold is hiding.
  6. Make the leprechaun take you to his pot of gold. You should find it at the end of the rainbow.

The Roasted Garlic and Sweet Potato Soup recipe is from The Eat Clean Diet

Ingredients:

6 large sweet potatoes
1 large cooking onion, chopped
1 Tbsp extra virgin olive oil
1/2 head roasted garlic
6 cups reduced-salt chicken broth or bouillon
1 or 2 cups of water

Instructions:

Preheat oven to 350. Slice potatoes in half lengthwise. Rub cut surfaces with olive oil and place cut side down on a baking sheet. On the same baking sheet, please a whole bulb of garlic and drizzle with more olive oil. Bake uncovered in the center of oven until the sweet potatoes are soft, about 45 minutes.

Meanwhile heat olive oil in a saute pan. Add chopped onion and saute until clear and soft. Place in food processor. Remove half the potato pulp from the sweet potatoes and place in a food processor. Squeeze the roasted garlic into the food processor with the sweet potato pulp. Run the food processor until a smooth puree forms. Place puree into a large saucepan and add remaining pureed potato pulp. Add broth and water until desired consistency. Cook on medium until thoroughly heated.

Five tips for getting fit with friends

When it comes to walking regularly, The Beatles said it best: “You’ll get by with a little help from your friends.” And the experts agree with the Fab Four. “If we’re physically active with others, we’re more inclined to do it regularly,” says Judith Down, director of the Alberta Centre for Active Living.

Studies, too, have shown that not only do friends keep you moving, they can be good for your overall health, both physical and mental. One Harvard Medical School study found that even if your friend’s friend’s friend is happy, that can positively impact your own mental health. “A lot of work has been done around social support and the importance of friendships,” says Laurene Rehman, an associate professor in the Health and Human Performance department at Dalhousie University, in Halifax, who also notes that friends create fun, break tension and create “overall positive feelings and positive attitudes.” So with that in mind, here are some tips for starting your own walking club:
